Easy Chocolate Chip Cinnamon Cookies

Chewy Chocolate Chip Cinnamon Cookies are filled with warm-spiced Biscoff cookie butter, ground cinnamon, and a quick dust of cinnamon sugar!!

In a medium bowl, whisk together flour, baking soda, ground cinnamon  and kosher salt.

On medium high speed, beat the butter and cookie butter until smooth.

Add in the light brown sugar and granulated sugar and beat until creamy.

Add in the egg and vanilla extract and mix on medium speed until fully combined.

Add all of the flour mixture and mix on low speed until almost combined.

Remove the bowl from the stand mixer and fold in the chocolate chips. Using a cookie scoop, scoop the dough to form 2 1/2 tablespoon sized dough balls. Chill in the refrigerator for 45 minutes.

Preheat the oven to 350 degrees F. Roll dough into smooth cookie dough balls then roll in cinnamon sugar to coat.

 Bake!! Place the balls of dough onto the prepared baking sheet and bake for 10 – 12 minutes.
